You know I love to share my obsessions with you and I have a relatively new one…Rachel Hollis. She can cook, entertain, write and she’s the woman everyone wants not only as a best friend but in her tribe. I’ve read her book, Girl, Wash Your Face and am ready to re-read it. I’m on her third fiction book, I own both of her cookbooks, and last week went to see her documentary, Made For More. Why am I and half a million women obsessed with Rachel? Because she wants more for every single one of us. She wanted more for herself and wants every woman to know she has the power to to create more for herself, because we deserve it. She’s a badass and her husband is her number one supporter and shows it whenever he can. You just want to have them over for happy hour because they’re fun people who are truly good. That’s just Rachel!
This week I was reading the intro to her first cookbook, Upscale Downhome (because it’s actually interesting!) and one big takeaway I got was that you can make everyday dinner a special occasion. I have platters up the wazoo but they rarely come out unless we have company or are throwing a party. Why? Why not serve dinner on nice platters? So, this past Sunday I did just that. We had shrimp tacos, street corn salad, guacamole and margaritas of course! I pulled out one of my treasured platters that we got on a trip to Mexico with the older kids many moons ago and created Rachel’s Street Corn Salad on it. Fresh guacamole in another dish from Mexico and it simply made everything more festive, and I think it made it taste better too.
My focus has always been my family but even more so now. I am challenging myself and all of you to get more involved. Get your hands dirty, play on the floor, put your phone away, put that macaroni and cheese in your fancy platter for dinner…enjoy life! We get so caught up in real-time things such as social media and honestly, who cares? Put your phone down and make memories. I make dinner every night but tonight we are making dinner together…mini pizzas with “cute” mini pepperonis. Toddler K has decided mini pepperonis are so much cuter than the regular size and she’s right!
How are you going to focus more on family? Yourself? Your spouse? Your dreams?
Oh and I can’t forget the recipe for the salad because it was freaking awesome!
- 1 T olive oil
- 1 (15oz) can corn
- 4 cups mixed baby greens
- 1 (15oz) can black beans
- 1/2 c Feta cheese
- 1/4 chopped cilantro
- 1 ripe avocado, cubed
- 1/2 cup light sour cream
- 1/4 cup freshly squeezed lime juice
- 1 garlic clove, minced
- 1 t taco seasoning
- Preheat a large skilled over medium-high heat. When the pan is hot, add the olive oil, and corn. Toast the corn kernels until browned, 4 to 6 minutes. Set aside while you assemble the salad.
- Mix together all the ingredients for the dressing and set aside.
- Place the mixed greens into a serving bowl or onto a platter.
- Mix together the toasted corn, black beans, crumbled cheese, cilantro and avocado. Stir in the dressing and mix to combine.
- Spoon the corn mixture over the mixed greens and serve immediately.
