Easter is just over a week away and if you’re like me, you’re planning for it! We are hosting again this year so that means in addition to food, there will be cocktails! My friends over at Ron Barceló have concocted this amazing cocktail that is called El Conejo Bueno which is Spanish for “Good Bunny.” The best part of this cocktail? It has veggies in it so over here at My Simplified Life…we call that a healthy drink!
- 2 oz Ron Barceló Gran Añejo
- 1 oz fresh carrot juice
- .5 oz chickpea (garbanzo) water
- .75 oz sugar
- Dropper full of salt water
- Add all ingredients in shaker over rocks. Shake vigorously and strain in glass. Garnish with a slice of carrot.
